Healthy Banana and Egg pancakes



Serves 2-3

1 mashed, super ripe banana

2 eggs

Spray pan with PAM

My additions: a bit of CINNAMON spice
Optional: Walnuts, pecans, peanut butter, berries, protein powder

OPTION: Crepes…add a little water to mixture and then pour complete mixture into pan…swirl pan around to cover and let brown..flip and brown other side… fill with flavored yogurt…or blueberries and sour creme…

Directions: place your banana in the magic bullet. In another bowl whisk eggs. pour eggs into banana mixture, and give it a whirl…. Add any additions. Put your choice of oil on a pan [ low-medium heat ]. Add a silver dollar-sized amount to the pan. Let the cake set for 30 seconds [ or when the center bubbles ] & flip it! Enjoy with berries or a bit of syrup.

These are wonderful! I love them! I didn’t add any syrup…you could mush up some berries and pour over them if you like…
these are a keeper!
