Crepes….ooo la la laaa
YES…you can enjoy eating crepes on a Plant based diet!!! I know, I know, I thought I would never enjoy a crepe again… after all milk..eggs and flour are the ingredients…so when you give give up white flour, eggs and milk…one would think..no more crepes..but guess what… no more…you can have you Crepes and eat them too!!!
Give these crepes a try…let your imagination run wild..with the fillings for these wonderful crepes…you can put fresh fruit compote inside..or you can make a Nut butter and Banana filled crepe…or how about blueberry compote with cashew cream!!! Or you can make savory crepes…stick some shredded zuchinni…thinly sliced tomatoes..sliced muchrooms..and a drizzle of balsamic vinager…yumm! I love sauted mushroom, onions and green peppers…all tucked inside of a delious crepe!!! You can stuff alot in a crepe…be creative!!
Here is the crepe recipe..
Crepes shouldn’t be like pancakes; they should be thin, crispy and not too sweet. This batter will be thin, but it’s meant to be! I find that just under 1/2 cup of batter per crepe is perfect, but it depends on the size of your pan.
(Makes 5-6 crepes)
1 cup fresh almond flour
1 Teasoon Baking soda
1 cup + 1 tablespoon almond milk / soy milk
3 tablespoons coconut oil
1 Tab Vinegar
Note: Add in’s…if you want a savory crepe..just add a couple Tablespoons of herbs in the batter..depending on what the filling is..I have used…rosmary..and garlic…chives…(when using potatoes in my filling..) play with the herbs..
Stir together the almond flour and almond milk until smooth, with no lumps
Stir in the coconut oil and add the vinegar..let stand for 5 minutes ( if making savory crepes you can add your choice of herbs at this point..)
In a nonstick pan…
Pour a little coconut oil in the pan, and With a piece of paper towel, make sure the whole pan is coated in the coconut oil..heat pan
Take the pan off the heat and pour about 1/2 cup full of batter into it
Swirl it around the pan so the batter coats the bottom
Put the pan back onto the heat, slightly shaking it back and forth constantly, and flip when it moves around freely and bubbles are forming
Cook for about the same amount of time on this side
Slide the crepe onto a plate and start again with the next crepe. I use wax paper between my crepes..at this point you can freeze them also..
Keep the crepes going…until all of the batter is finished..
