Zucchini…Recipes fresh from the garden !

This is fresh from our garden tonight… Lots and lots of Zucchini! I didn’t know these things grow so quickly! I swear I can see them grow…leave them for a couple days..and WHAM! They are ready to pick!! The yellow squash is growing in leaps and bounds too! My cherry tomatoes bushes are full of little green plump tomatoes..just waiting to turn red!!! And I can’t wait!!! Everyday we have a basket full of fresh veggies! I love it!! Now I needed some creative ideas for Zucchini..so I asked around and surfed the net..and came up with my own …plant based and vegan based recipes…hope you enjoy these…if your down my way..look me up…and I will send you home with some Veggies!

Zucchini Pancakes
Makes at least 8
– 1 cup oat or almond flour
– 1/2 tsp baking powder
– 1/4 tsp baking soda
– 1/4 tsp salt
– fresh ground black pepper
– 1/3 cup soy yogurt
– 1/2 cup almond milk (more if needed)
– 1 1/2 cups finely shredded zucchini (or so–1 small zucchini will do)
– chopped parsley for garnish.

METHOD
1. Whisk together dry ingredients in a medium bowl.
2. In a separate bowl, and almond milk together. Squeeze excess moisture out of the shredded zucchini and add to liquid ingredients with the sage leaf. Mix.

3. Gently mix the wet ingredients into the dry, adding a few splashes of almond milk, if needed until the dry ingredients are just moistened. The batter should be firm (not as runny as pancakes) but not stiff.

4. Spray a cast iron skillet with some cooking spray…so they don't stick.. You want to be able to cook the pancakes for about 3 mins per side so they get golden and crispy but not burnt. Drop a scant 1/4 cup of batter onto the heated griddle and flatten slightly. Repeat Cook about 3 mins, then flip and cook 3 mins.

5. You can keep these warm on a rack in a 300 degree oven for about 30 mins or so if you need to make them ahead for a dinner party. Serve with the relish and garnish with parsley. Serve with Tomato garlic relish

Tomato-Onion Relish
– 1 large sweet onion, diced
-1 garlic clove
– 1 large tomato, diced
– 1/4 tsp salt
– fresh ground black pepper

METHOD
Dice Onion, Tomatoes, garlic add some salt & Pepper… to serve add a dollop of hummus then add a teaspoon of the tomato-onio relish on top of zucchini pancakes..!

Fresh Tomato,Basil and lemon “Zucchini” pasta

yes, you can make "pasta" from Zucchini! And it is soooo good!!! If you don't have a fancy dancy spiral cutter machine..use a juliette cutter.. they have them at Target..it's like a potato peeler
This is a great dish… hope you like it..

Ingredients
•1/3 Cup Vegetable broth
•2 garlic cloves, minced
•2 tsp lemon zest
•½ tsp red chili flakes
•½ lb (250g) cherry tomatoes, halved
•4-6 small zucchini … julienned into long pieces (or peeled lengthwise)
•freshly squeezed juice of ½ lemon
•fresh basil leaves
•salt and pepper

Instructions
1.1/4 Cup Vegetable broth.., add garlic, lemon zest, and chili flakes and cook for one minute.
2.Add cherry tomatoes and cook for an additional minute or two
3.Next put in the julieenned zucchini..cook for three to four minutes longer..
4. Next, Add lemon juice, fresh basil, salt and pepper and toss to combine
Serve right away..

Vegan Zucchini Bread
Makes 2 loaves

Ingredients
•6 tbsp ground flax seeds
•½ c warm water
•1 C Guava sweetner
•½ c applesauce
•1 tsp vanilla
•2 to 2½ c grated zucchini (~3 medium-sized ones)
•2 c oat flour
•1 c whole wheat flour
•1 tbsp baking powder
•½ tsp baking soda
•1 tbsp cinnamon
•2 tsp nutmeg
•1 tsp salt
•1 c vegan chocolate chips or raisins, optional

Instructions
1.Grease two loaf pans.
2.Mix together flax seeds and warm water.
3.Add guava, applesauce, and vanilla; beat well.
4.Add grated zucchini; stir til combined.
5.In a separate bowl, sift together remaining dry ingredients.
6.Add dry mixture to wet and stir just until dry ingredients are moistened and everything is incorporated evenly; some lumps are fine. If adding additional mix-ins, fold them in now. Divide batter between prepared pans.
7.Bake at 350 for 50-55 minutes, or until knife inserted in center of loaf comes out clean. Let cool a few minutes before slicing. I made one extra long loaf and four small ones..
