Mushroom Tofu Stroganoff

Tofu gets a bad wrap.. Such a shame really, it is a very versatilel product.. That can take on the flavor of just about anything you would like to maranide it in.Tofu was first used in China over 2,000 years ago. Experts believe that its production began sometime during the Han dynasty, in the second century B.C. According to one Chinese legend, tofu was invented when a cook decided to experiment by flavoring a batch of cooked soybeans with the compound nagari. Instead of flavored soybeans, he wound up with bean curd. It made it’s way from China, tofu was introduced into Korea, and reached Japan in the eight century A.D. Tofu first came about America around 1949…around 1950 it when America’s consumption of meat and dairy products skyrocketed, tofu virtually fell out of public sight..until the 70’s and 80’s.Tofu soon seemed to have found its place at the intersection of virtually every new trend in diet and nutrition in America. It was truly an idea and a food whose time had come. People in all walks of life discovered it as an inexpensive, healthful, ready-to-eat, and remarkably versatile source of high-quality protein that was entirely free of cholesterol, low in fats, and contained less calories per gram of protein than any other food ; at only 72 calories per 100 gram serving it is a dieter’s delight. And good news for that 67% of all Americans who were trying to lose weight.

And yet people continue to stick their noses up in the air when you even mention the word! Many will not even give it a try.. which is really a shame ..but I must admit.. I use to be one of those who snubbed the idea of even giving it a try.. until now.. a chance encounter at a Chinese Restaruant one day, change the way I was to forever look at Tofu! I had a wonderful Tofu Mushroom stir fry one day that was thee BEST stir fry I have ever tired. And dare I say, ONE of THEE best things I have ever eaten in my entire life! From that day one.. I became determinded to find ways to bring more tofu into my life and into the lives of all that would let me. I plan on making tofu recipes a household name , every good cook or chef needs several good Tofu recipes in there pocket!
This is the first of many Tofy recipes I will share with you. I ask that you open your eyes..and give tofu a try.. one way to do this is to go to Whole Foods and choose everything made from TOFU on their HOT food bar! Just take a bite of each item in a togo container and give it a go! Yes, I did this! I went and choose everything they had..only a bite each..and sat in my car.. and ate it!! And I loved it!!! At this point I had already given up meat. So this was a wonderful introduction to my healthy lifestyle. I hope you will give Tofu a try and find at least one good TOFU recipe you can pass on and serve to guest..this is my new favorite of mine and I seem to be making it once a week! Give it a try.. it just may be your families favorite! ( oh and you don’t have to make a “BIG” announcement that it’s touf night.. others may be more receptive if you just announce “mushroom Stroganoff:) Just saying!
Mushroom Tofu Stroganoff
2 Cups Portabella Mushrooms
1 Cup Firm Tofu cut in slices
1/2 Cup sliced onion
1 container of Vegeaterian Mushroom gravy
1 /2 package of whole wheat noodles
1/2 Cup tofu sourcream (Tofutti) or make own, recipe below
Homemade tofu sour cream:
1 (10 1/2 ounce) package lite silken firm tofu, crumbled
1 tablespoon canola or olive oil
4 to 5 teaspoons lemon juice
2 teaspoons apple cider vinegar
1 teaspoon sweetener
1/2 teaspoon salt
What you do:
1. Place all ingredients in a food processor or blender.
2. Process several minutes, until very creamy and smooth. Make sure you process it for a few minutes to ensure the creamy texture.
3. Refrigerate.
It stays fresh for approximately 5 days.)

Drain Tofu and dry with papertowels.

In medium saucepan place mushrooms and onion. Cook until tender..tofu4 add Sliced tofu and heat through.tofu6
In seperate saucepan heat water and cook noodles..and drain
Remove mushroom mixture and set aside.tofu12> In saucepan add mushroom gravy and heat. Add mushroom and TOFU mixture carefully stiring mixture. Next add Cooked noodles..tofu8> then add tofu sour cream..turn off heat..tofu9 and stir carefully, making sure not to break up sliced tofu.
