As I am traveling on my healthy journey I am trying to educate myself on the why’s and how’s of nutrition..recently I have started to track different area’s of nutrition…not only calories..but carbs,fat,Protein, Sodium and sugar’s…
In doing this I have started to made some comparison’s to what my life was like before in the matters of what I ate daily…I am trying to not only get healthy , but to understand the how and why’s so I do not do it all over again. I think the more I can understand about food and what it does to our bodies..the more we are able to make educated decisions that will benefit our bodies.
Today is my first of what I am sure to be..many comparison’s… I must say I am shocked at the results…it’s no wonder I am fat…in my mind …I was thinking..that One sasuage egg and cheese biscuit..would be better for me than say…donuts from Dunkin doughnuts.. or some type of pastry…but in reality it was worse!

I was shocked that I was eating 630 calories for breakfast! 31 carbs and 1520 of sodium! And this was every week Monday through Friday on my way to work! OMG! And if someone brought donuts..I would eat one or two of those! UGH!

I no longer go through the drive through window at fast food joints..nor do I eat in my car.. I plan my meals..down to the last morsel…some might think this is too rigid for them.. but let me ask you this.. How are you doing with eating on the run? Would you be reading this if it was working for you?? Maybe being rigid is a good thing…and it could help.. I know one day it will all be second nature for me to eat healthy.. but right now I need a plan..and figuring out the nutritional value of what is being put into my body…is my priority these days! I urge you to do the same.. educate yourself..knowledge can be a wonderful tool for you to win your battle with food..we can’t eliminate food completly..so I need to learn to live with it..the best way I can..so that I can have a healthy body..yes, I am just beginning to learn about nutrition…but each day I make my numbers in my food diary on MY FITNESS PAL..IT MAKES ME FEEL GOOD!

Addiction

Food-AddictI can’t imagine what its like to be a drug addict..to want a high so badly you will go through thousands of dollars just to get a high..I don’t like to take over the counter drugs unless necessary…let alone the hard stuff..when I had my knee operation..I didn’t like taking the pain medicine..because of the way it makes me feel..I would rather have the pain…how can you like how that makes you feel? And not knowing if the next high is going to kill you… or not..a chance I am not willing to take…why take something that isn’t going to let you remember what the heck you did the night before? I just can’t wrap my head around this…

I can’t imagine what it’s like to NEED a drink everyday… I have beer and wine in my frig that had been there over a year now..I know for some, that it would of been gone the next day….everyday they stop and grab that 12 pack on the way home…and finish it off..before bedtime…Don’t get me wrong.. I enjoy a nice glass of wine..but the rest of the bottle goes to waste…I may have a white Russian if I am out for dinner..but one is enough.. I’ve never been drunk…NEVER… Two glasses of wine and I know I don’t like how it make me feel.. I like having complete control…I don’t like how alcohol makes me feel.. I can’t understand why people can’t see that they can’t drive after have too much? If you fumble while getting the keys in the ignition.. don’t drive.. it’s a no brainer.. how do you like laying by the toilet and puking your guts out? Yet, You still enjoy doing it all over again..tomorrow.. Not me…lives and familes are ruined by alcohol…why do it?

I enjoy sex.. but I can’t imagine being addicted to it and giving up my body to anyone that I meet….or being addicted to looking at it…people meet in the back alley and arrange sex…with a stranger and then go home to their partner..and do it again.. I’d be afraid some creep would kill me.. or that I would end up with a STD..or even AIDS..isn’t this degrading to you? How can you be addicted to this? How does it even begin?

And don’t get me started on cigarettes…I’ve kissed a man who smoked and it tasted awful! I have lived with a smoker and seen his yellow teeth and smelled the smoke on his clothing.. I hated it.. how can you want to stick a cig in your mouth and do all that harm to your lungs! We have all seen the pictures of the smokers lungs…black with tar like substance …and the cancer.. they spend millions of dollars on campaigns to keep young kids to stop..and yet.. its a multi dollar business… no matter what anyone says.. it’s not cool to smoke..not to mention the cost of a carton of those things! How do you like spending all of your hard earned money like that??? Up in smoke!
No I can’t understand how a person gets addicted to smoking.. drinking.. drugs..and sex…..those things don’t interest me…however….
I do under stand being addicted to food.. I understand how it make me feel better after a long day at work.. I understand that no matter how bad my day goes..that I can turn to the freezer and reach for the half gallon of ice cream… and eat myself happy…
I get great pleasure out of eating.. it comforts my soul.. it can make a bad day better.. a fight..tolerable..it can heal my broken heart.. and make me feel better inside..I use food like a druggie uses a needle.. it make me feel better.. and it’s not illegal.. No one cares if I stuff myself and weigh 300 pounds.. no one says a word…

In fact many family and friends of mine are are enablers … my hook up..my pimp…my dealer…see they make things to eat that I like and they even encourage me to eat me.. oh I am not blaming them.. I am just telling you they are enablers..and they don’t even know it..

If I was a alcoholic..would you ask me over to your house and offer me a drink? Or if I was a addicted to drugs..would you ask me over and have some on a silver platter for me?
If you saw me destroying myself with alcohol and drugs.. you would intervene? Why of course you would..
then why don’t you do that for me..? The food addict? Why not encourage me to seek help for my addiction???
Why not talk to me as my weight rises..and not ignore it?
Do you think I enjoy being fat? DO you think I just eat to much so I am getting fat? Do you even care?
It’s a disease that is not spoken about..after all you don’t want to hurt my feelings, right?

I have often said that I wish I wouldn’t have taken up the food addiction vise.. why? Cause I can get no help..if I was addicted to just about anything else..my insurance would pay for me to get help.. and certainly my family would seek that help for me.. out of sight out of mind..with alcohol..drugs.and tabacco…
but not with food addiction.. I still have to eat.. and to someone that LOVES food and is addicted to it.. there is no half ass way to do it.. all of nothing..yes , I eat all…everything.. and then afterwards I feel guilt..shame.. and despair.. which in turns makes me want to eat more to make me feel better..its a vicious circle..one that is difficult to break..but I am trying..
I started attending OA, Overeaters Anonymous …I attend the phone meetings.. it helps me be more aware..of what I am eating.. and allows me to be accountable..this helps me..my family still doesn’t get it.. nor my friends.. and I understand that. it’s really ok..I need to get through this..breakthrough my addiction myself..and with GOD.. at my side..
I hope that one day people who have a food addiction will have a place to get help..a outreach program..even a in house program to learn how to eat again.. I am going to beat this food addiction.. even if I feel that it is the hardest addiction on earth to kick.. after all I can drive down one block and find a fast food joint..just waiting to help me get my food fix! Hell they even have Dollar menu …that I can always afford something to fill my need…I get to walk the isle at Walmart and find just about any food that I want to get my fix..and if I am lucky..they are giving out samples… and being the kind person that I am.. sometimes they will give me seconds! Every second of every day food is on my mind.. every where I look..on TV on Bill boards..in Magazines.. I can find food porn.. and something new that could help me stay in this addiction!
But I want out… I have to get out.. I need to get out..I want out! So step by step. I will fight back.. I am stepping up and taking responsibility for my choices…I am eliminating many unhealthy things.. I started with Diet Coke.. I use to drink 6=8 a day.. I have been diet coke free for three weeks now.. and I feel better already.. my heartburn at night has stopped.. and I thirst for water now.. the colder the better! Now I have eliminated fast foods..I don’t go.. I can’t go.. I don’t have control..it’s not good for me.. so I am removing it from my life…period..next will be packaged food…all packaged foods..then white flour…baby steps..tomorrow is my first face to face OA meeting .. and I am scared shitless! But I am going… I am not sure what to expect…but I am looking forward to this very much.. the phone meetings are great..but this will be even better! wish me luck.. .and to those who are suffering with food addiction.. please reach out to someone.. a friend. pastor ..doctor…ask for help… and find OA ..go to the internet and find the phone numbers and conference call code to participate..it does help..

My ever changing plan

Learning to life a healthy lifestyle can be a trying time. It’s not cut and dry at all.. It is a ever changing… learning as much as you can along the way.. and adapting to you. Plant based lifestyle is my goal.. however I learned quickly that it can be difficult to go from Bad eating habits of a lifetime to 100% change.

I am not beating myself over this.. I am living a healthy lifestyle..which is a 360 turn around for me.. I have given up all meat..and eggs..I still eat a tiny amount of cheese..and a tablespoon of oil for stir fry now and again. I don’t eat processed food in packages..But do eat canned beans and vegetables , if I do not have fresh or frozen. When I am at someone else’s home , I don’t balk at what they are serving.. I look around and figure out my best options. Sometimes I feel I am eating too much bread..so I am trying to monitor this . The last week I didn’t feel like I got enough fresh veggies.. so I have started to write down what I am eating.. and pushing for more and more veggies.. I do ok at night but during the day..can be difficult.

I think the take away from this is that you need to stop and think about what you are eating anytime you change your patterns.. When you do this, you need to monitor yourself and see if it’s working for you.. and if it’s not figure what adjustments you need to make. It’s really all about you.. and what works for your life.
Also as I try and educate myself on healthy eating, I find more ideals that I want to try..

We all need to drink more water..I think I get my fair share in.. daily, but have changed things up a little..by starting my day with TWO glasses of water to get me going! By noon I can ususally get in another two bottles..and another two before dinner…finishing with a big glass before bed…Water is so good for you..you just can’t drink enough! I don’t just figure I am getting enough in my diet.. I make sure I am!

As i said earlier..I need veggies..and fruit. I just started trying to get as many veggies and fruits as possible in my day…I still have my oatmeal for breakfast,but I top it with lots of fruit now.. today I added a whole peach, sliced…5 fresh strawberries and a handful of blueberries.. It was very filling! And I felt good getting all that fruit in .. I was so full I didn’t need a snack in the morning.. it carried me through to lunch.. lunch is usually on the run.. with foods I know I can have.. but today I took the time.. made a big ole Kale salad..with sunflower seeds, raisins…and carrots..again a great way to get in my veggies.. and very filling..

With a little planning I was able to really BOOST my veggie and fruit intake..mindful eating is a great thing..
Although I am not completely plant based.. I know I am on the road to there..and doing my best along the way.
Taking my time..and carefull planning will get me there.

Faux fried chicken bites! YUMMO!

This Faux fried chicken is crazy good folks!!! I can’t believe it’s not Chicken!! It is just as flavorful as a piece of your grandma’s best Fried chicken on a Sunday afternoon! And NO CHICKEN’S were killed to make it!! This is one for the recipe vault folks! Your children, grandchildren and even adults will love this recipe.. and it’s quick and easy!! Your kids and grandkids will ask for these over and over..so much better than those pressed chick nugget things at some fast food joint! And so much better for them!! And well, let’s just say if you don’t tell them it’s tofu.. I won’t mention a thing!!! Sometimes the less they know..they better they eat!

First thing first.. go find you some, Better Than Bouillon, No Chicken Base..it is Vegan certified…
sure to pick up the Vegetarian Base one’s.. They have a beef NO BEEF one too!nochicken

Mix The better than bouillon as follows:
Measure out your “Better than Bouillon” base into a small mixing bowl;
– break or mash up the base with a fork or spoon so that it is not one big glob;
– add a very little bit of boiling water to moisten the base and stir,
– keep adding just a little bit of boiling water at a time to the base mixture and stir
If you add “too much” water at one time to the base mixture,
the water and the base tend to remain separated.
Adding just a little bit of boiling water at a time enables you to use mechanical force with your stirrer to better get the water absorbed into the base mixture.

After you mix up enough to “cover” your Amount of Firm TOFU….put it in a container that is sealable… Next take the TOFU about you want to use.. I used about a quarter of my block. Only because I didn’t want to eat tooooo many of these….believe me I would of ate them all ..they are that good!! You can buy TOFU that is already cubed for you ..or if you bought the whole block of TOFU..cut the amount you want off the block..putting the rest back in some clean water and in the frig covered… Take you TOFU and cut into chunks.. and put into the Bouillon broth you have already made up. Let this marinade at least four hours and it is best , if you can let it marinade overnight. After you have marinated it… pat it dry with some paper towels… this is a important step..we want to get some of the extra moisture out of the TOFU… Once this is done.tofuch1.you are ready to dredge into the flower mixture and spices…I used 1 cup of flour …2 Tab Black paper..2 Tab paprika…a dash of salt..I also used a little Texas seasoning from Tex Joy…I dredge the tofu, let it sit for about five minutes and then dredge it again…tofuch2 in a frying pan on the stove I placed..a small amount of refined coconut oil. This is best sometimes the regular coconut oil is a little too strong for frying. Get your oil nice and hot and start dropping in the Floured TOFU pieces..tofuch4.now just like “fried” chicken.. it takes time.. using a medium to low heat..let the tofu pieces brown..I used a wooden spatula and moved the tofu over once on each side.. this takes patients.tofuch4.but it will be worth it.. once the TOFU is golden brown ,remove from pan and drain on a paper towel…serve immediately.tofuch6.you can use any dipping sauce you fancy.. Artisan Vegetable Tart

tart25 With a garden FULL of cherry tomatoes I needed something special to showcase these fresh little beauties!! So I came up with the “Artisan vegetable tart”, with Cherry tomatoes, caramelized onions, mushrooms and spinach! Yummo!
This was a huge hit with my family! I must say it turned it nicely!
And it was a breeze to make!! I hope your family enjoys it as much as we did, and it becomes a part of your “favorite” dishes! Let me a note and let me know what you think..and please follow my blog!!

Artisan Vegetable Tart
Crust:
preheat oven to 400 degrees
1 1/2 cup flour (A/P white flour or almond flour)
1/2 Cup COLD butter ( if vegan use butter substitute or omit)
1/2 t. salt
1/2 Cup fresh shredded parmesan cheese or Vegan cheese or Nurtitional Yeast
1/2 t. lemon juice
1/2 Cup ICE cold water

Cut a stick of butter into 12 pieces and place in freezer ( if your vegan omit this)
In a food processor add flour, salt and parmesan cheese. Give it a twirl or two.. Next add butter through the food processor shoot..one a time..plusing between adding butter. tart3Next add ice cold water One Tablespoon at a time..until it starts to form a ball.. you may not use all of the water.. watch the dough..after each addition of water.. once it comes together.tart4.stop adding water and let it twirl around. Remove dough from bowl and wrap in plastic wrap and put in refrigerator around 20 minutes.tart5 Put the toppings together while you wait!

Topping:
Whole grain Brown mustard (enough to cover pastry)
Crushed garlic ( about 8 Tablespoons)
1 large onion sliced
8 mushrooms sliced
1 cup of cherry tomatoes sliced in half
1/2 Cup fresh loose spinach
1/4 cup shredded parmesam cheese, vegan cheese or nutritional yeast

In sauté pan add onion with a little bit of vegetable broth and sauté onions,tart11 once the onions are nice and soft add the mushrooms and cherry tomatoes..heattart12 , just until the tomatoes are heated through. tart13DO NOT OVER HEAT!! OR YOUR TOMATOES WITH BE MUSHY!!! Set aside to cook just a little..

Get your dough from the refrigerator and roll out the dough into a rectangle…it doesn’t need to be perfect. In fact you don’t want it to be.. It’s artisan…tart6
Once the dough is rolled out.. spread the Whole grain mustard over dough,tart7 next add chopped garlic,tart8 then add loose leaf spinach all over crust..tart14making sure to arrange nicely and breaking off any stems…next add the tomatoes, onion, mushroom mixture.tart17.making sure to drain the mixture before adding to the tart…if you like you can sprinkle cheese, vegan cheese or nutritional yeast over the top before baking. Once everything is in place on the tart..start at one end and roll up slightly..going in a circle motion all around the tart ( see example)tart19 Place on cookie sheet to bake. Bake until crust is golden brown.. around 25-35 minutes..tart20 remove and let sit 10-15 minutes before serving.tart28 ENJOY!

Orzo & Cherry Tomato Salad

salad23Cherry Tomato Orzo Salad Recipe

Ingredients
8 ounces orzo pasta
Black Olives sliced
1 pint red cherry tomatoes, sliced in half
1 pint yellow cherry tomatoes, sliced in half
1 green pepper sliced thin and chunked
1 large cucumber, peeled and chopped
2 green onions, thinly sliced
2 Tbsp minced fresh oregano
Juice of a lemon
Black pepper to taste

1 Bring a large pot of well salted water to a rolling boil. Add the orzo, stirring it so that it doesn’t stick to the bottom of the pan. Cook, uncovered, at a high boil until al dente, cooked through but still a bit firm. Drain the pasta and rinse with cold water to stop the pasta from cooking further.

2 Put pasta in a large bowl. At this point you can make ahead and chill until you are ready to serve . Toss with the rest of the ingredients, the tomatoes, cucumber, green onions, green pepper,black olives, oregano, lemon juice, and black pepper.

Stuffed Poblano Chiles

•6 large poblano chiles or green bell peppers
•4 Tab vegetable broth
•1 medium onion, finely chopped
•2 cloves garlic, finely chopped
1 can fire roasted tomatoes
•2 jalapenos, seeded and chopped
•1/2 red bell pepper, finely chopped
•1/2 cup chopped fresh cilantro
•1 tsp ground cumin
•1 cup of lentils cooked
•1-3 tsp hot sauce, to taste
•freshly ground black pepper, to taste

Steps:
First you need to fire roast the peppers.. you can do this under the broiler or on the outdoor grill. I use the broiler..keep a close eye on them.. they will burn fast.. I then remove them from the broiler pan and place in a paper bag,peppers2 until cool enough to touch..peppers8 once you can work with them.peppers9 Take them out of the bag..and split down the middle so you can stuff. (carefully remove the seeds)

Heat 4 tablespoons of vegetable broth. Add onion, garlic, jalapenos, red bell pepper, can of fire roasted diced tomatoes (drained) cilantro and cumin, and cook over medium heat until golden brown for about 4 minutes.

Remove pan from heat and stir in lentils, hot sauce.peppers10 Carefully Spoon the mixture into the hollowed chiles and sprinkle with nutritional yeast, if desired.

Mushroom Tofu Stroganoff

Tofu gets a bad wrap.. Such a shame really, it is a very versatilel product.. That can take on the flavor of just about anything you would like to maranide it in.Tofu was first used in China over 2,000 years ago. Experts believe that its production began sometime during the Han dynasty, in the second century B.C. According to one Chinese legend, tofu was invented when a cook decided to experiment by flavoring a batch of cooked soybeans with the compound nagari. Instead of flavored soybeans, he wound up with bean curd. It made it’s way from China, tofu was introduced into Korea, and reached Japan in the eight century A.D. Tofu first came about America around 1949…around 1950 it when America’s consumption of meat and dairy products skyrocketed, tofu virtually fell out of public sight..until the 70’s and 80’s.Tofu soon seemed to have found its place at the intersection of virtually every new trend in diet and nutrition in America. It was truly an idea and a food whose time had come. People in all walks of life discovered it as an inexpensive, healthful, ready-to-eat, and remarkably versatile source of high-quality protein that was entirely free of cholesterol, low in fats, and contained less calories per gram of protein than any other food ; at only 72 calories per 100 gram serving it is a dieter’s delight. And good news for that 67% of all Americans who were trying to lose weight.

And yet people continue to stick their noses up in the air when you even mention the word! Many will not even give it a try.. which is really a shame ..but I must admit.. I use to be one of those who snubbed the idea of even giving it a try.. until now.. a chance encounter at a Chinese Restaruant one day, change the way I was to forever look at Tofu! I had a wonderful Tofu Mushroom stir fry one day that was thee BEST stir fry I have ever tired. And dare I say, ONE of THEE best things I have ever eaten in my entire life! From that day one.. I became determinded to find ways to bring more tofu into my life and into the lives of all that would let me. I plan on making tofu recipes a household name , every good cook or chef needs several good Tofu recipes in there pocket!
This is the first of many Tofy recipes I will share with you. I ask that you open your eyes..and give tofu a try.. one way to do this is to go to Whole Foods and choose everything made from TOFU on their HOT food bar! Just take a bite of each item in a togo container and give it a go! Yes, I did this! I went and choose everything they had..only a bite each..and sat in my car.. and ate it!! And I loved it!!! At this point I had already given up meat. So this was a wonderful introduction to my healthy lifestyle. I hope you will give Tofu a try and find at least one good TOFU recipe you can pass on and serve to guest..this is my new favorite of mine and I seem to be making it once a week! Give it a try.. it just may be your families favorite! ( oh and you don’t have to make a “BIG” announcement that it’s touf night.. others may be more receptive if you just announce “mushroom Stroganoff:) Just saying!

Mushroom Tofu Stroganoff
2 Cups Portabella Mushrooms
1 Cup Firm Tofu cut in slices
1/2 Cup sliced onion
1 container of Vegeaterian Mushroom gravy
1 /2 package of whole wheat noodles
1/2 Cup tofu sourcream (Tofutti) or make own, recipe below
Homemade tofu sour cream:
1 (10 1/2 ounce) package lite silken firm tofu, crumbled
1 tablespoon canola or olive oil
4 to 5 teaspoons lemon juice
2 teaspoons apple cider vinegar
1 teaspoon sweetener
1/2 teaspoon salt
What you do:
1. Place all ingredients in a food processor or blender.
2. Process several minutes, until very creamy and smooth. Make sure you process it for a few minutes to ensure the creamy texture.
3. Refrigerate.
It stays fresh for approximately 5 days.)

Drain Tofu and dry with papertowels.

In medium saucepan place mushrooms and onion. Cook until tender..tofu4 add Sliced tofu and heat through.tofu6
In seperate saucepan heat water and cook noodles..and drain
Remove mushroom mixture and set aside.tofu12> In saucepan add mushroom gravy and heat. Add mushroom and TOFU mixture carefully stiring mixture. Next add Cooked noodles..tofu8> then add tofu sour cream..turn off heat..tofu9 and stir carefully, making sure not to break up sliced tofu.

I would of said No..but now.. they are a great staple to my diet..This is a versitile little bean…according to Wikipedia…With about 30% of their calories from protein, lentils have the third-highest level of protein, by weight, of any legume or nut, after soybeans and hemp.[3] Proteins include the essential amino acids isoleucine and lysine, and lentils are an essential source of inexpensive protein in many parts of the world, especially in West Asia and the Indian subcontinent, which have large vegetarian populations.[4] Lentils are deficient in two essential amino acids, methionine and cysteine.[5] However, sprouted lentils contain sufficient levels of all essential amino acids, including methionine and cysteine.[6]

Lentils also contain dietary fiber, folate, vitamin B1, and minerals. Red (or pink) lentils contain a lower concentration of fiber than green lentils (11% rather than 31%).[7] Health magazine has selected lentils as one of the five healthiest foods.[8] Lentils are often mixed with grains, such as rice or small pasta, which results in a complete protein dish.

Lentils also have some anti-nutritional factors, such as trypsin inhibitors and relatively high phytate content. Trypsin is an enzyme involved in digestion, and phytates reduce the bio-availability of dietary minerals.[9] The phytates can be reduced by soaking the lentils in warm water overnight.

Lentils are a good source of iron, having over half of a person’s daily iron allowance in a 100g serving

Now with stats like those..what’s not to love!!!
One of the great things about lentil..is they don’t have a strong flavor..so you can use them in many ways..they will take on the flavor of the dish and complement it..
Today I made a pot of lentils.. one bag is 16 ounces of lentils.. first you have to put them in a strainer and rinse them.. looking for small pebbles…rinse well.. lentils do not need to soak like beans do..which is nice when you forget to soak the beans the night before!! After rinsed put in large pot with 6-8 cups of water.. bring water to a boil and then turn down heat to low add lid to pot ..but only set it sideways on the pan.. so that the steam can be let off.. I added one large onion chopped fine to my beans and one green pepper finley chopped…add them once the water comes to a boil, along with 4 tablespoons of black pepper. let cook ..about 15-20 minutes..if needed add more water..peppers3
at this point they are a good to eat as a side dish..but I wanted to do more with mine..so I made lentil sloppy joeys..and lentil meatloaf as well as Mexican chile relleno’s!! I know I have been one busy gal today!!!
Here are my recipes..fill free to give them a try.. but if you post them.. please don’t post the recipe..but only a link to me back here on my blog.. thanks I worked hard on these!

Lentils sloppy joeys
One cup of cooked lentils ( with the green peppers and onions in them)
add the following

1 T Paprika
1/2 tsp Garlic powder
1/2 tsp Chili powder (chipotle chili powder is good in this)
1/2 tsp dried Marjoram
1/2 tsp dry mustard
1/2 tsp salt
1/2 tsp Black pepper
mix into the beans..
then add 3 Tablespoons of tomato paste
mix into the bean mixture

add 1/4 cup of water..and cook over low heat until throughly mixed and hot and bubbly..sloppy joes1
it’s ready to eat!! Put on a whole grain bun or try a whole grain tortills…yummo!!!

Lentil Meatless loaf..

2 Cups cooked lentils ( with the onion and green peppers cooked in)

add the following
1 cup chopped onions
2 Cups shredded carrots
1 C five grain ceral by Bob’s Red Mill
1/2 Cup chopped mushrooms
2 Tablespoon chopped garlic
2 Tab mustard
1 tablespoons vinegar
1 can fire roasted garlic tomatoes

mix everything together.. and place into two loaf pans. meat33
Glaze for top:
one can tomatoe paste
4 Tables guava2 tablespoons dried onion OR use 2 T Onion powder

mix well and put on top of the meatless loaf.
bake at 350 for 30-40 minutes
let loaf cool before cutting enjoy with somve vegan gravy over the slice of meatless loaf..or a slice of meatless loaf topped with whipped potatoes or even cauliflower potatoes..meat36

Mexican chile relleno’s..these are out of this world!

take 4 chile poblano peppers and put on a rack under the broiler..
watching closely ..because they will burn quickly…turn each pepper and let the broiler roast the skin on all sides…remove when all sides are done and place in a paper bag..peppers2let alone for about 30 minutes..the steam in the bad will soften the peppers and make them easier to handle. Once they are cool remove from bag peppers7
and slice the pepper length wide do that you can stuff the pepper.peppers9.see picture..then you need to carefully remove all of the seeds.peppers8 Fill the open cavity of the pepper with the cooked beans..peppers10add nutritional flakes or shredded vegan cheese..and bake at 350 for 20-30 minutes. this little baby’s are wonderful! When you eat it.. cut through the pepper and get pepper and beans in each bite! The pepper has a little bit of a kick and it out of this world! Great Mexican dish.. this dishes are worthy of Company and even inlaws! Add some of your favorite sides and you will have a wonderful dinner…even a non vegan would enjoy!peppers13

Oats and banana pancakes

Good morning…today I got up with PANCAKES on my mind..actually, if the truth be told.. I went to bed with pancakes on my mind… I even dreamed about pancakes last night..so the first thing this morning, I was in the kitchen developing a plant based/Vegan pancake recipe… it took a few trial and errors…in the land of pancake making.. but I finally got it!
I took two cups of Oats (not instant) and ground them into oat flour…it was easy. Peasy…measure two cups of oats and put in blender or food processor ( I used a magic bullet) and taaadaaa.. oat flour…a matter of seconds.
Make sure you ground it super fine.. I shook mine up a little..to make sure it was getting everything incorporated.pancakes54

These turned out to be light and airy pancakes..just like I wanted.. And they were soooo good.. I didn’t need any syrup! You could use maple syrup or honey..or aven a fresh berry compote for the topping…but I picked mine up and ate them.. they were that good!!

I suggest you use a griddle to make these.. they can be a little hard to flip in a pan. I changed in the middle of making mine , from pan to griddle…it was a lot easisier…

I hope you like them as much as I did… I think the banana in the batter gives it a little more “punch”! Give them a try!

Banana Oat pancakes

1 Cup Oats ( ground into flour)
½ container of Almond milk ( little size 8 oz..so it would be 4 oz.)
2 Teaspoons baking soda
½ teaspoon salt
2 teaspoons cinnamon
1 teaspoon of vanilla
2 Tab honey
2 over ripe banana’s smashed with fork
Mix oat flour,baking soda, salt , cinnamon, mix with spoon..add vanilla and almond milk
Mix well and add honey and smashed bananas. if the mixture is a little dry, add a bit more almond mix..being careful not to add too much.

Heat griddle and spray with non stick spray and drop ¼ cup of batter for each pancakes. Turning only once ( when top of pancake sis all bubbly, they are ready to turn).
